The biggest problem I see with Korean food outside of Korea is the lack of freshness - I know Ramyeon packages, especially the "Shin Ramyeon" or "Kimchee Ramyeon" and cook them up - stir in an egg the places try hard but in Korea....

I've sent back plates of food before by having a giant fucking nasty ass pickle laying....
Places think it's acceptable to put a giant wet pickle on your plate in the middle of your food/fries/chips - whatever it touches becomes contaminated.

Having really fresh eggs makes a difference as well vinegar will taint....
Another important point is to use very fresh eggs, eggs get 'runnier' as they get older an egg' there is another one I have up my sleeve.

Every time i've tried this it just does work. Tried adding white vinegar and doing the whirlpool vortex thing but the egg just explodes or breaks apart into a totall mess which always ends up in the bin. It just refuses to hold together in one neat sphere...

Poaching only really works well with fresh eggs.
