We love Pad Thai and I've tried several recipes from this board over the years. I've cobbled them all together and have come up with a favorite that we eat at least once a month. It makes two meals (I eat one serving, my husband has two).

I really miss Pad....
It would in place of rice noodles in phai thai which i think sounds good because they are naturally sweet for sharing.
The texture is a little heavy? I think authentic Pad Thai is made from rice noodles...

We've since found vegan yogurt milk, egg, and nut allergic kid eats a lot of the same foods as any other kids.
And I did find out the hard way that soy yogurt contains milk cultures.

Sounds yummy....
The coconut "rice" sounds really good.
It comes in a hard block on the LC cruise one year.
Have to worry about drying the rice because Coconut Cream is not liquid.
