If I want to outsource my email to another provider, is it possible if they are on their on network/data center?

As you say, it's a layer patterns; an overloaded mail system won't take down your outward facing web server, and vice versa but I have several VPS....
Or not, it is very common to separate incoming mail service from web service.

Ask your mail host what the addresses for their mail servers are, and give that to your hosting company so they can change the MX records on your domain to those servers.
