What should fuel rail pressure be for a LB7 with unmodified fuel system?
....
My thoughts were a bad FPR or a bad Rail pressure sensor sending that the LB7 spec calls for.
To the desired pressure? It is steady and high.

Besides the wideband it can read a bunch of other sensors. This is unfortunate for my bank account because I've kind of been obsessed with data ...

I wouldn't.
Intake air
There's plenty of good real estate on the Intake manifold to install a temp sensor.
Toward putting the fp sensor just after the fuel filter by putting a t on the line.
