I think you're right that the Harlem gospel services have become very touristy.
There are day tours that you could do jazz fan.
For good gospel choirs and music, Harlem is the place to go.
I'd say a Callowhill, Sadowsky UV70, or a Roscoe CenStan 5 in that order. I have personal experience with them all, I have a little gospel background, and they are all GREAT instruments. I also own an old SKB3006 so I know exactly what you're going for...
