Do potatoes evolve into carrots if left in the cupboard too long? When potatoes start sprouting green bits in the cupboard, does this mean they are turning into carrots? If this is so then surely carrots are simply rotten potatoes hence the orange colouring...

Happens if you keep the potato until it is due to produce other potatoes - chuck them out or plant them leave potatoes to go like that I wouldn't like to see how you store your cheese etc! Wrong section, mate.

Probably not very well of the potato skin that is green as this tends to be an indicator of higher gycoalkaloids, I think.
Not sure how this would work with skin-less potatoes.

A couple of months worth? It depends on breed, looks like the potatoes will do well, but not knowing the breed of potato it's all just guessing.
