Do potatoes evolve into carrots if left in the cupboard too long? When potatoes start sprouting green bits in the cupboard, does this mean they are turning into carrots? If this is so then surely carrots are simply rotten potatoes hence the orange colouring...

No, they just evolve.
Happens if you keep the potato until it is due to produce other potatoes - chuck them out or plant them might work for your hallucinations of rotten potatoes turning into carrots.

Melt butter and olive oil and pour it over the potatoes then bake ten for about an hour skinned potatoes (or whatever smallish potatoes you have on hand) 4 T.
