I smoked ribs last weekend.
I rubbed the ribs and let them sit till they were room temp.
I held the smoker at about 195 degrees.
Smoked about 4 1/2 to 5 hours. Internal temp 149.
The ribs seemed tough and certainly not off the bone.
Any suggestions would...

If you want....
3 hours want during the last 20 to 30 minutes .
It pretty much guarantees fall-off-the-bone ribs.
Well, I'm certainly not a pro when it comes to grilling and smoking but maybe in the future you might want to try the 3-2-1 method.

Grill....
Mix 1 tablespoon salt, the lime zest.
Add a grill to medium or place a cast-iron grill pan over medium heat.
And cut into 2 rib portions, using kitchen shears.
The ribs from the grill to a cutting board.

Thought I'd post a differently today as I recently cooked and ate my worst ribs ever, and what LED up to them turning out as poorly as the did. First, I like to use a charcoal smoker, allow an overnight sit with the rub on, 5-6 hours on the smoker, cook...

They tasted.
I smoked my first ribs yesterday, which generally went fine but I was also working on finishing a wiring project in my house so all told the ribs cooked an extra hour and it showed.

Today is national prime rib day so maybe try that on the grill?? We love grilling veggies but I will red pepper the hell out of some chicken for him lol.

I've been hungry for country style pork ribs, so picked some up today. Do I want to fix them in the clay baker or do the "boil and bake"?
What's your favorite way to make them? I've always used my clay baker, but it's so HOT today that I may find another...

My BIL prefers charcoal to do his BBQ, but he doesn't really BBQ, he grills. Burgers, chicken, and steak mostly. Nothing that goes on a low heat for hours.
I prefer gas to do my grilling. Tastes...

Aside from that, the gas grill is only begging when the charcoal isn't hot.
QVC has an electric grill or so, but otherwise I'm charcoal all the way.
Not as messy, and you don't have to wait for charcoal to heat up .

Grilling is fast and hot! ive started firing up the grill all this week grill with sidecar smoker for $180 at Lowes.
Real BBQ is low and slow.
