It is a crapshoot that might be causing the problem .
The best advice I can give to any jailbroken ipod/iphone problems is wipe the whole device out that the app works ok and does not conflict with any phone/ipod function/feature.

Hi there~
I bought non-Apple AV composite cable with USB.
After I updated my ipod touch as 2.0, TV-out did not work correctly.
Of course, it displayed well AT FIRST!
But after couple of seconds, video playing stopped.
And it went back to the video list...

YOU MUST BE RUNNING 3.0 FIRMWARE PRIOR TO RUNNING THE redsn0w JAILBREAK. YOU MUST ALSO BE ON iTUNES 8.2 IN ORDER FOR 3.0 TO WORK.
