I was able to connect 2 laptops using Ad-Hoc, but how to connect the third one??

The same thing as 2 laptops, on the third laptop you look for the SSID which the 2 first laptops go funny and it is easier to start the ad-hoc for a different one - in theory it shouldn't make.

On the Mac it's at System Preferences, Sharing, Remote Login, on Ubuntu apparently... .
There are surely ways to do that via a cron, but I think, its far better to install Dropbox

There usually is a lot to do about the security of servers since a lot of sensitive information is stored there but I think it's more important to make sure the company-laptops (and USB-Sticks) are secure since they're way easier to lose (or steal).
