As a general rule, since you are married many things will pass outside of probate will pass outside of probate.
Indeed you should engage an attorney and go over the specifics of avoiding probate and end of life stuff.

Anyone have the slightest clue about how to handle probate when inheriting an Italian property left in a will by an English person to another English person? Can I just leave it to the English solicitor or will I need to get an Italian solicitor involved...

If this is the case it just gets inherited under whatever foreign law.
Italian inheritance law basically (and this is an over-simplification) splits all property between the inheriting parties.
