We eat the pork loin because it is low in fat, because it is low in fat it tends to get dry. refuses to eat pork that is not well done.
I think brine may be the solution (yuck yuck).
Any suggestions.

I would cook at 180 as fan oven tends to get a little hotter Granddad g says that he would never cook chops in an oven - he would always grill them - brush with honey keep turning - some slices apple just before they are ready - or nustard and stuffing... .

Tonight I cooked Tennessee Pork Loin W/ Whiskey, Brown Sugar & Mustard from BBQ USA.
Turned out fantastic
Also put a couple of sweet potatoes on the grill and rounded it out with collard greens.
The Mrs was impressed she is my toughest critic!
