You should use an instant read type thermometer and check the center of the thickest part - it should read 160F. .
A: At 350F it shold take about 2 hours.

I need an induction friendly sauce for roast pork lion. Cooking loin is no problem, heavy salt, pepper, garlic crust... then slow roast at 325' till 145' in middle. I know they say to cook to 170ish, but med rare pork loin is a whole different treat. ...
