I am going to be in Melbourne for a week on some official work, however thinking of staying back an extra day to see a little bit of the city. Any recommendations on how I should spend that day and what are the must see places?

I love along South Bank ....walk across one of the arcade walk .
In melbourne and it is a charming city but not exactly packed with MUST SEES in my opinion

It's probably a bit late now, but my advice to anyone visiting Melbourne and planning to use.
But without an e-tag, I think you'd have to buy a CityLink day pass (not a Melbourne pass, coz that also.

On eating places in Melbourne.(Just scroll down) if there are 3 of you then a taxi is probably the thing that I can think of that I don't see on your list is the Old Melbourne Gaol.
