Why 2 x Outboard Motors

I am wondering why would one have 2 x 40hp outboard motors on a boat instead of 1 x 80hp?
I know

is that it will get you to the 30knot top speed quicker than one motor can.
Would 2 x 40hp motors be more
outboard on ebay.
