Pan roasted pork chops with cranberries and red swiss chard

I've made this once, and it was just great. I used half the brown sugar,
blended with Diabetisweet brown sugar substitute. The cranberry sauce
was savory and delicious, would be absolutely perfect with turkey,
especially for those of us who prefer savory to very sweet. I plan to
make it this Thanksgiving, as an antidote to the canned sliced goo I'm
forced by in law preference to serve each year.

Not only is this dish delicious and nicely plated, it's loaded with
nutrients.

My daughter asked me about making her own cranberry sauce, rather than
using that canned sliced goo. I gave her this:

FRESH CRANBERRY SAUCE

INGREDIENTS:

1 cup sugar or Splenda
1 cup water
1 12-ounce package Ocean Spray Fresh or Frozen Cranberries

DIRECTIONS:

Combine sugar and water in a medium saucepan. Bring to boil, stirring to
dissolve sugar; add cranberries, return to boil. You can add up to a pint
of fresh or frozen blueberries for added sweetness. Reduce heat and boil
gently for 10 minutes, stirring occasionally, until berries burst.

[Dad note: This is where you'd run it through the food mill or a sieve, if
you want it smooth]

At this point you can add a number of optional ingredients. For example,
mix in a half a cup of roughly chopped pecans with or without a few strips
of orange peel. You can also add a cup of raisins or currants.

Cover and cool completely at room temperature. Refrigerate until serving
time. Makes 2 1/4 cups.

So do I . I also add grated orange peel(just the orange zest paart) and
some sticks of cinnamon and a few cloves that I carefully pick out once
the sauce is cool. makes for a nice sauce.

To a lot of people, cilantro tastes like soap! It's genetic. A small amount
of Jalapeo might be worth trying, though. There are many Thai dishes and
sauces that combine sweet and hot. I like it for dipping chicken, too.

Yes, a small amount of Jalapeno would work for me, but I don't care much for
hot things in food. I like mild salsa, mild hot sauce, etc., not the hot
stuff, and cilantro is out of the question. I find it to be nasty tasting.

Me too, I don't mind it in Thai food at Thai restaurants but in places that

Jun doesn't use a lot of cilantro in her Thai cooking. She does use a lot
of Jalapeos, Serranos or Thai chiles, but gauges the heat level to what I
like. I get the cilantro as a garnish or in other stuff, as appropriate,
because she knows I like it. I AM the King!!!
