I was reading some recipes and tips for using my new sunbeam innovo bbq (awesome btw). all the pork roast recipes suggest putting the pork on a rack over a pan with a shallow amount of water in it, then topping it up every half hour. does anyone do this...

The water will help it to stop drying out but also i spray the pork with a mix? so is this water in the pan a good idea for other roasts (beef, lamb etc)? Slow cooked pork roastyes the pork will turn....
