You can make these out of any squash seeds, doesn't have to be pumpkins....
I have made them before without rinsing them too...
The recipe didn't say this but rinse the seeds from the pumpkin and let them drain for a while.

Looking for a good, tested recipe for pumpkin soup. A recipe search shows hundreds and hundreds of results, which I'd rather not spend hours in exploring.

I'm working on a pumpkin beer recipe and really don't know what to expect sugar wise from the pumpkins. I've heard not much at all just a little color. Is this true or is there more to the story?

We like to use fresh, local pumpkins when in season so we cut up the whole pumpkins, discard the seeds and guts and throw them in the mash.
All I can really tell you is the way we make our pumpkin beer.
