Which is easiest and best for scenery? we will need a car when we get to quebec but if the train journey is lovely then I would rather chill on the train with a glass of wine for sure!

And Quebec City a car is a real liability as parking is very expensive/limited plus the cities are a delight to walk.

Make sure you read about the history of Quebec city (a little bit at least!) .Regardless outside of Quebec, go at least to the Montmorency falls.
