I finally got a roasting pan and will be roasting a whole turkey tomorrow. The recipe says to rub the turkey inside and out with kosher salt, then place in a large stock pot (which I don't have) and cover with cold water and allow to soak overnight.

The giblets are usually in a little package all nicely wrapped up with the neck, very easy to remove .
No need to brine! It does improve the turkey a bit and make it moist but my first time brining I came out with a very salty turkey.

When I was in, we had this often and in many forms. Roast beef, yankee pot roast, open roast beef sandwiches, it was rumored to be incorporated in the cookies. What meals did you seem to get in abundance?

Peas have to be marrowfat on my families dinners although I do like garden peas .
Never had dauphinois or onions & peppers with any roast.
Don't usually have cranberry but if there was some there it again .
