Eth2 is the current nic.
Eth0 and eth1 were nics on the server before migration.
Have you installed the ESX version of VMWare tools? If you do an ls mod do you see the pcnet32.

vmware 2.0 crashed regularly on one server I have - however, hasn't crashed since the recent VMware Server....
Windows Server 2008 is supported only in v2.
Vmware Server v2 can use v1 images.
