So I am at a standstill, Ok, so first off. I am waiting on my A1C to come back from the lab. I am not on any medication.
This is my problem:
All day yesterday and today I have been having quite high blood glucose levels. Normally I am in the 140-180 range...

If you put your car in "M" come....
Car is manual or automatic? AT When the car shift from 2ond to 1st it will sometimes do this .
The compressor puts a significant load on the engine.
It's probably the car adjusting as the A/C compressor turns on and off .

I don't think that is a transmission.
Is this while in drive, or neutral? How much force do you have applied to the brakes when this occurs? Depending on how many miles/kms youve done, it might be time to change the ATF fluid and filter .
