I have stored white wheat and I am looking for a bread recipe. I realize that the white wheat is lower in gluten and will not rise as much. I would like to make it with nothing other than the wheat that I grind up. Any ideas?

If I did it again, I would definitely use the US-05 instead .
Mine was 5 lbs White Wheat, 5 lbs Pale Malt, 0.25 magnum @ 60, 0.25 simcoe @ 10 mins, WLP 320 of the original Boulevard Wheat.

Just me tho? Paddy, the white whole wheat isn't as sturdy a flour as the whole wheat but it's heavier than white flour.
